Recipes

HONEY & MUSTARD SWORDFISH STEAKS

Place 4 fish steaks (Broadbill, Marlin, Tuna or Shark) in a bowl and pour over 1/2 a lime, 150ml honey and mustard marinade, a dash of Tabasco sauce.
Cover and leave in a cool place for about 1 hour.
Cook on a bar-b-que for a few minutes, baste, turn and cook other side.  


BAR-B-QUED SNAPPER WITH MUSHROOM STUFFING

Mix 175g chopped flat mushrooms, 175g button mushrooms, 2 shallots,rhind of 1 lime and the juice of 2 limes together.
Use this to stuff the fish.
Wrap the fish in tinfoil and cook on the bbq for 10-15 minutes on each side.

Serves 4

SCALLOPS ON WONTONS

Deep fry wontons for 10-15 seconds per side then place on paper towel.
Add 1/2 teaspoon Wasabi to 200g Cream Friesh or Sour Cream.
Fry scallops in butter.
Place spoon full of Wasabi cream on wonton, then scallops then pickled ginger and grated cucumber.

Or replace ginger and cucumber with coleslaw.
This is very delicious and very moorish.

SCALLOPS AND BLACK PUDDING (Entre)

While watching one of the masterchef programes I saw someone use black pudding with scallops, so decided it was worth a try.  Not that I liked the thought of that black stuff with my lovely scallops.  But with the combination of all that I put on the plate it was a fantastic delight and one I would happily pay big dollars for in a restaurant.

4 Scallops per person (more if main meal)
4 Slices black pudding per person
Micro salad or watercress
Aoli
Quince Jelly and Burnese Sauce mixed 50/50

Mix Quince and Sauce together.
Cook scallops and black pudding to your liking.

To plate I used a deep round dinner plate.
Place small amount of salad in centre, pipe Aoli on top,
Two teaspoons of sauce between scallops,
Place Black pudding on plate and scallops on top.

Hope you enjoy this as much as we did.


FLOUNDER FRITTERS

Filet flounder and cut into thing strips
Add egg and a little flour to binde
Salt and Pepper a must.
Fry in a little butter.


MARLIN PATE

Cream cheese
Sour cream
Sweet Chilly Sauce
Lemon Juice
Salt & Pepper
Smoked Fish
Put in whizz and combine until right taste.
